It is cooked using three different types of wood - ocote, red oak and pepper tree - to achieve a complex, balanced flavor profile that makes it work brilliantly in cocktails. After Tahona stone milling, natural fermentation with its own yeast in ayacahuite pine vats and double distillation in maestro mezcalero Doroteo Garcia's small copper still, it is bottled at 42% ABV.
